There is an eloquence in simplicity. When I brewed the latest beer I learned a couple of things about this principle. Not only was I showing my co-worker and fellow beer aficionado how to brew, but I killed two birds with one stone by brewing a SMASH beer and dry hopping it. Now I’ll admit most brewers get around to dry hopping well into their first year of brewing. Call me a late bloomer. In reality, I had my reasons for delaying the inevitable. It was a matter of learning how to develop flavor in the boil before throwing away hops in the fermenter.
